Sweet and Savory Pineapple Spam Stir-Fry Recipe
This recipe combines the salty richness of Spam, the sweetness of pineapple, and the crunch of sautéed yellow bell peppers, all served over a bed of fluffy white rice. It’s quick, easy, and packed with flavor!

Ingredients (Serves 2-3)
For the Stir-Fry:
• 1 can of Spam (or similar luncheon meat), diced into small cubes

• 1 medium yellow bell pepper, diced
• 1 cup of pineapple chunks (fresh or canned, drained)
• 2 tablespoons of soy sauce
• 1 tablespoon of honey or brown sugar (optional for extra sweetness)
• 1 teaspoon of garlic powder
• 1 teaspoon of paprika (optional for smoky flavor)
• 1 tablespoon of vegetable oil or butter
• A pinch of black pepper (to taste)
For Serving:
• 2 cups of cooked white rice
• Chopped green onions or cilantro (optional garnish)
Instructions

1. Cook the Rice
1. Prepare white rice according to package instructions and keep it warm.
2. Prepare the Ingredients
1. Dice the Spam into small cubes.
2. Chop the yellow bell pepper and pineapple chunks into bite-sized pieces.
3. Sear the Spam
1. Heat a large carbon steel pan or nonstick skillet over medium heat.
2. Add 1 tablespoon of oil or butter.
3. Add the diced Spam and sear until golden brown on all sides (about 4-5 minutes). Remove and set aside.
4. Sauté the Vegetables
1. In the same pan, add the yellow bell peppers and sauté for 2-3 minutes until slightly softened.
2. Add the pineapple chunks and cook for another 2 minutes, allowing them to caramelize slightly.
5. Combine and Season
1. Return the cooked Spam to the pan with the peppers and pineapple.
2. Drizzle soy sauce and honey (if using) over the mixture.
3. Sprinkle with garlic powder, paprika, and black pepper. Stir well to coat everything evenly.
4. Cook for another 1-2 minutes until the flavors meld together.
6. Serve
1. Spoon the cooked mixture over a bed of warm white rice.
2. Garnish with chopped green onions or cilantro for added freshness (optional).
Optional Variations
• Add a splash of sriracha or chili flakes for heat.
• Include other veggies like onions, carrots, or snap peas for extra texture.
• Replace white rice with fried rice or quinoa for variety.
